Fermentation allows some previously unusable coproducts to be available for pig feed. For example, potatoes contain toxic compounds known as glycoalkaloids, of which the most prevalent are solanine and chaconine. Potatoes are not easily digested if uncooked. When fermenting the potatoes, however, solanine is decomposed and the digestibility rises to 85-90 %. On top of this, pigs really like potatoes!
